Crock Pot Italian Chili

Homecoming week It’s homecoming week friends here in Estes Park, Colorado. Isn’t my girl adorbs? GO BOBCATS! She’s going to kill me for posting this photo of her on my blog. But I can’t help it, she’s so stinking cute. Busy fall nights have made all of the work I did a few weeks ago prepping 15 frozen crock pot meals sooooo worth it. I’m becoming the diva of the slow cooker!

Yesterday I fixed the crock pot Italian Chili and it was a hit with the hubs. I asked some Facebook friends if they wanted the recipe and 30 or so of you said yes. So here it is:

A Stewardship Challenge

My Journey

Many of you know that our family has been on an amazing journey since January when my husband got this crazy idea to get healthy. I thought it was going to be all him. Looking back, I too needed to make some personal changes.

It has not always been easy. At the beginning of the year when I chose my one word for 2012 as Steward, I had no idea that this concept would permeate everything.

Friday with Freda ~ Let’s Make Homemade Vegetable Beef Soup

Last Friday morning over coffee Grandma mentioned she would love to have some of her homemade vegetable soup. Immediately, I got excited. I remembered all of those fall nights when I was a little girl and coming home from school. Her amazing homemade vegetable beef soup would be on the stove simmering. I got even more excited when I remembered we had some leftover roast in the fridge from just two days before—sweet manna from heaven!

It was decided. That evening when I was finished work, we would make this soup together. The menu for the evening was set. I jotted down everything I needed to pick up from the store on my way home. This meal was going to be special.

Friday with Freda ~ It Needs More Salt!


Since Grandma Freda has moved in with us, I have the privilege of cooking for a woman who for the first eighteen years of my life prepared my meals everyday. Having grown up in a home where my parents both worked, and Grandma lived with us, she was the matron in the family kitchen. I was grateful for her mad cooking skills. Her food was simply amazing.

When she moved in with our family last year, I have to be honest; I was to say the least intimidated to cook for her. At eighty-nine, she has lost her sight and can’t prepare my favorite dishes like she used to. And so when I fix her food, she can at times be a is a tough gal to wow.  Inevitably, when I ask her how anything tastes, she always says it needs more salt. It doesn’t matter what it is…It needs more salt. 

It has become a huge joke in our house when she says it. Oh and if Jeff fixes the food, Jesus might as well have prepared it, because he can do no wrong, but more on this observation later.
